Peanut Butter Balls

I love peanut butter! I love it on toast, I love it in satay sauce, I love it in baked goods, I LOVE it! However some of the processed peanut butters that you buy in the supermarket are loaded with sugar and salt. To combat this I often make my own, so I know what’s in it, and it’s really easy to do if you have a food processer.

These peanut butter balls use my home made peanut butter, and they are a tasty indulgent treat, that are really quite good for you (as long as you only eat a couple at a time!). I keep these in the freezer and you can eat them straight out of the freezer or let them come to room temp before tucking in but I like them cold and chewy!

These balls are packed with protein, making them a great post-workout snack for muscle recovery and they are also a good source of magnesium, which can aid sleep. So have one after dinner and do your body and your sleep a favour.

1 Cups roasted, unsalted peanuts

½ Cup raw almonds

¼ Cup sunflower seeds

¼ Cup pepitas

¼ Cup shredded coconut

3 tbs maple syrup

¼ tsp cinnamon

1 tsp vanilla extract

1-2 Tbs raw cacao powder (for rolling the balls in)

Blend the peanuts and almonds until the consistency of a chunky peanut butter (around 3 minutes in a high powered food processor).

Add all remaining ingredients, except the raw cacao, and blend until well combined.

Roll spoonfuls of mixture into balls, and roll them in the raw cacao powder. Store in the freezer.
